The date of foundation of the fortified village of Oliveto should be placed around the year 1385, when the Florentine Republic had recently dominated Arezzo and its countryside. The land, unlike the entire Valdichiana, which was still marshy and malarial, was 'salubrious and fertile' as the Florentines liked to call it.
The governor of the village, also under pressure from the Florentine Guelphs, was forced to fortify the defensive walls with two watchtowers.
Although the presence of the Saracini family is only visible today in the heraldic coats of arms outside the gate of Oliveto Castle, their prominence since the early Middle Ages is beyond doubt Guelphs of faction, they did not have an easy life in Ghibelline Arezzo, nevertheless members of the family boasted prominent positions in the Papal States and high positions in the service of the Marquises of Ferrara. The b&b Fondaco del Moro decided to recover the ancient family's coat of arms to make it the symbol of the structure.
